An assortment of starters, including gazpacho, sardines, croquettes, spherical olives and kikos with guacamole, and hake with meunière sauce as the main course make up the dinner menu that the king and queen are offering tonight at the Royal Palace in Madrid to the leaders attending the NATO summit in Madrid.
The banquet, scheduled for 8:30 p.m., will gather 60 guests in the Gala Dining Room around the imperial table, including more than 40 heads of state and government and some consorts.
The menu has been commissioned from the Madrid chef Paco Roncero, who is going to open with a cast of thirteen appetizers, sources from the Casa del Rey have reported.
The list of starters includes spherical olives; red tuna brioche with old mustard; sea bass ceviche with tiger milk; picaña airbag; lobster with oil soup and pink grapefruit; shrimp omelette; marinated sardine with romescu sauce; glazed beef taco and smoked salmon gilda.
There are also shrimp croquettes with garlic; kikos with guacamole; cod fritter and gazpacho with basil oil.
As a main course, the presidents will savor hake with tapioca meunière sauce and trout roe, and for dessert, coconut foam with mint granita and passion fruit.
The menu is accompanied by red, white and sparkling wine, as well as water.
Before dinner, the king and queen go to greet their leaders and spouses in the Throne Room and then take a family photo in the Hall of Halberdiers.
